Five-Spice Flavoured Spareribs Recipe


Ingredients:

1 lb(500g) pork spareribs

3.5 tbsp soy sauce

3 tbsp olive oil 

1/4 tsp brown sugar

1/2 oz (15g) scallions, chopped

1 tbsp fresh ginger, chopped

1 tsp rice wine

3 fennel seeds

5 tsp rice vinegar

1 tsp salt, or to taste

Procedure:

1. Wash the spareribs and chop into 1.25-inch long(33mm) pieces. 

   Soak in cold water to cover for 5mins.

   Remove, drain and marinate in a little soy sauce for 15mins.

   Drain, dry well,set aside.

2. Heat the oil in a wok to about 350F(175C),(or until a piece of scallion green or ginger sizzles and moves around quickly when tossed into the oil).

   Add the spareribs and stir fry until out layer golden brown.

   Add the scallions, ginger and the remaining soy sauce. Stir

   Add rice wine, fennel seeds, brown sugar, vinegar and salt.

   Stir and fry 1 min.

   Add water 1 cup of water, cook until boiled, turn heat to low.

   Simmer until the sauce thicken and the meal falls from the bones. (If it's too dry, then add a few hot water).

   Remove and serve.
