Tomato Egg Noodle is popular healthy homemade Chinese noodle dish. Many friends like to call it noodle with tomato and egg sauce, or egg noodles with tomato sauce.
It's delicious, comfortable, and good to our heart. It's suitable to eat all seasons of a year. It's actually Tomato with Fried Egg mixed with (or served with) cooked noodle. Cooking noodle is easy and everyone should know how to cook Tomato with Fried Egg. So this dish is quick easy healthy Chinese food.
It's better to choose juicy tomato and cook tomato longer, so that the noodle can absorb enough juice and become delicious.
Tomato Egg Noodle Recipes
Prep and cooking times: 20 minutes
2 tomato, medium
100g dried noodle
1 egg, medium
2 tablespoon olive oil
1 teaspoon soy sauce
1/4 teaspoon salt
1 tablespoon onion, chopped
1 tablespoon garlic, chopped
1. Prepare a soup cooker, add about 10 cups of water.
Bring to a boil. Slip in noodle, stir and split by using chopsticks (avoid noodle sticky).
Bring to a boil again. Continue to boil in low heat till cooked.(The noodle becomes transparent and no hard core).
Take out and drain by a colander, arrange in a big bowl.
Making egg tomato sauce.(Stir fried egg tomato)
1. Wash and cut tomato into bite size flakes.
2. Crack egg in a small bowl, beat well.
3. Heat oil in a wok, slip in egg liquid.
Sway the wok making sure the egg liquid spread into the bottom evenly.
Stir into small flakes when the egg becomes solid.
Dish out and set aside.
4. Leave oil in the wok (or add 1 teaspoon if no left).
Add Seasoning, stir till fragrance.
Add tomato flakes, stir fry a few seconds.
Add soy sauce and 1 tablespoon hot water.
Stir fry and simmer for 2 minutes.
5. Put back egg, stir fry and mix well.
Add salt, stir fry a few seconds.
6. Turn off heat. Arrange on the noodle. Stir and mix. Serve.
Tip: You may add some tomato sauce if you like to eat sauce.
