Eggplant Salad Recipe

Eggplant Salad Recipe can be used in high blood pressure diet.


Eggplant recipe Eggplant tastes delicious and soft. You can steam, stir fry, stew, bake or deep fry. You can find that the eggplant tends to absorb lots of cooking oil when you stir fry or stew. That means eggplant helps to remove fat. It has function of clearing away heat and promoting blood circulation. So it can eliminate edema and relieve pain. Purple color eggplant contains vitamin P which helps to prevent hypertension, arteriosclerosis, blood stasis, etc. It can reduce cholesterol and prevent cancer.

a. Steamed eggplant with sesame paste

Ingredients:

350g eggplant,purple color

Seasoning

10g sesame paste

1 tablespoon sesame oil

1 teaspoon rice vinegar

1/2 teaspoon salt

Procedure:

1. Clean eggplant, cut into 4 pieces. Put on a plate.

2. Place the plate on the tray of a steamer. Steam for 20mins or the eggplant becomes very soft to bite.

3. Turn off heat. Take out the plate, pour out the water in the plate.

4. Mix Seasoning evenly( add some water if dry). Pour on the eggplant.

   Stir and mix well, serve.

Serving Method: Serve as side dish at breakfast,lunch or dinner.

Beneficial function: To nourish Yin, sooth the liver and reduce the blood pressure.

b. Steamed eggplant in chrysanthemum soup

Ingredients:

2 purple eggplant

10g chrysanthemum

Seasoning

1 1/2 tablespoon sesame oil

1/2 teaspoon salt

1 teaspoon soy sauce

1 teaspoon salt

1 teaspoon rice vinegar

Procedure:

1. Add 2 cups of water in teapot, bring to a boil.Turn off heat.

Add chrysanthemum, cover. Steep at least 10mins.

2. Clean eggplant, cut into 4 pieces each. Put in a bowl.

Pour in chrysanthemum soup(step 1).

3. Place the bowl on the tray of a steamer, steam for 20-30mins.

4. Turn off heat. Take out the bowl,add Seasoning. Stir and mix well. Serve.

Serving Method: Serve as side dish at breakfast,lunch or dinner.

Beneficial function: To sooth the liver and reduce the blood pressure.
