1. Zangxiang theory-Heart(III)

The physiological functions of the heart

a. Governing blood.

The reason that the heart propels blood to circulate within the vessels lies in the propelling and warming functions of heart-Qi and heart-Yang as well as the nourishing and moistening functions of heart-Yin and heart-blood.

Sufficiency of heart-Qi, heart-blood, heart-Yin and heart-Yang guarantee normal beat of the heart and continuous circulation of blood to nourish all parts of the body, thus maintaining the normal physiological functions of all tissues and organs with the manifestations of full vitality, ruddy complexion and normal pulse. Otherwise, it'll lead a series of pathological changes such as pale complexion and thin and weak pulse due to insufficiency of heart-Qi and cyanotic complexion and unsmoothness pulse or slow pulse with irregular intervals or slow regular intermittent pulse due to stagnation of heart-blood.

b. Controlling the mind

Know as "the heart storing spirit", meaning the heart governs the mental activities. Obviously, the conception of the heart in TCM includes certain functions of the brain.

The relationships between the heart and the body, the sensory organs and the orifices

a. the heart governs the vessels

Meaning that the heart bears close relationship with the vessels in structure, function and pathology. For example, in sufficiency of heart-blood and emptiness of blood vessels will lead to thin and weak pulse.

b. The heart opens into the tongue

A branch of the heart meridian runs into the tongue,so the state of the tongue can reflect the physiological functions and pathological changes of the heart.

Whether the heart functions well in governing the vessels or in controlling the mind can be understood from the color and shape of the tongue. If heart-Qi, heart-blood, heart-Yin and heart-Yang are normal, the tongue is ruddy and lustrous in appearance, agile in movement, soft in texture, keen in taste and fluent in speaking. Insufficiency of heart-blood leads to lightly whitish tongue without taste; up-flaming of heart-fire brings on deep colored tongue or ulcerated tongue; abnormal heart spirit results in curled tongue, stiff tongue and dysphasia.

c. External manifestation on the face

If heart-blood is sufficient and flows smoothly, the face is ruddy and lustrous; if heart-Qi is insufficient and heart-blood is deficient, the face is pale and lusterless; if heart-blood is stagnated, the face is cyanotic.

The pericardium

It's a tissue surrounding the heart to protect the heart. The heart is the monarch-organ and cannot be directly attacked by pathogenic factors. Otherwise it'll disturb heart spirit and threaten life. The symptoms of high fever, coma and delirium in exogenous febrile diseases are described as "invasion of pathogenic factors into the pericardium" in TCM.

2. Summer Recipes

a. Fish noodle

Ingredients:

1 fish head

500g fish meat

1 tablespoon rice wine

1 teaspoon olive oil

Seasoning A

1 block ginger,cut into flakes

1 big scallion, cut into sections

1 tablespoon rice vinegar

2 cup milk

Seasoning B

1/2 teaspoon salt

1 teaspoon rice wine

Seasoning C

1 teaspoon salt

Procedure:

1. Cut fish meat into small cubes,then chop into ground fish. Put in fridge for 30mins.

2. While ground fish in fridge cook fish head soup.

   Heat oil in a wok, add fish head. Pan fry both side for 1min respectively.

   Sprinkle rice wine.

   remove fish head to a pot. Add cold water,cover the fish head.

   Add Seasoning A. Simmer with cover about 30mins.

3. After 30mins,take out ground fish.Add Seasoning B, mix well.

   Stir at the same direction by hands to form fish paste.

   Add two times 2 teaspoon water during stiring(don't add much one time).

   Throw the meat several times(method:take some in hand,throw to bottom of the case) to make fish paste both tough and elastically.

4. Put fish paste in a food plastic bag. (or use a cake decorating tool if you have). Accumulate ground fish in a bottom corner of the bag, forming a round tip. Cut a hole on the corner top.(If you like thin noodle cut a small hole while cut bigger if you like broad noodle).

5. Now the soup should be boiling,add salt(Seasoning C). Squeezing fish paste in the soup to form fish noodle.

6. When the noodle soup boil again, turn off heat.

Serving Method: Drink soup, eat noodle.

b. Black Mushroom Stew with Tofu

In hot day our appetite becomes decreased and metabolism becomes slow. It's better to eat some tofu to supplement protein intake as it's easier to be digested than meat.

Ingredients:

6 black mushroom(shiitake),soaked

1 block tofu(firmed)

2 tablespoon ground beef(vegans don't need)

1 1/2 olive oil

1/4 cup carrot, chopped

Seasoning A

1 teaspoon rice wine

1/4 teaspoon salt

1 teaspoon cornstarch

1 teaspoon olive oil

Seasoning B

1 tablespoon scallion,chopped

1 tablespoon garlic,chopped

1 teaspoon rice wine

1 teaspoon soy sauce

Procedure:

1. Add Seasoning A on the ground beef, mix well,marinate for 15mins.

2. Clean mushroom( If big,cut into 4 pieces for each),boil 10mins in water.Take out.

3. Cut tofu into small cubes.

4. Heat oil in a wok,add ground beef,slightly separate,stir fry when meat turns color.

   Add Seasoning B and carrot,stir fry.

   Add tofu cubes and mushroom.Add one tablespoon. Carefully stir well.

5. Cover, simmer 15mins. Turn off heat. Serve.

c. Bitter Melon Stir Fry Egg and tomato

Ingredients:

1 bitter melon

1 egg,big

1 tomato,medium

1 1/2 tablespoon olive oil

Seasoning A

1/2 teaspoon salt

1 teaspoon soy sauce

1 teaspoon fermented soybean(option)

1 tablespoon scallion, chopped

1 teaspoon cornstarch

Procedure:

1. Clean bitter melon,cut into 2 pieces along the long side,scoop out pulp using a teaspoon. Along the cross side cut into small chips.

2. Clean tomato,cut into small cubes.

3. Crack egg in a small bowl,stir evenly.

4. Heat oil in a wok,slip in egg liquid.Sway the wok making sure egg spread on the bottom of the wok. Stir fry.

5. Add Seasoning A, bitter melon chips and tomato cubes, stir fry for 5mins. Turn off heat, serve.

Serving Method: Serve as side dish at breakfast,lunch or dinner.

Beneficial Function: Clear away heat, detoxification.

d. Job's Tears and Mung bean Drinks

Ingredients:

1/2 cup Job's Tears

1/2 cup mung bean

Procedure:

1. Clean Job's Tears and mung bean, add in a rice cooker,add 10 cups water. Cook for 2 hours.

2. Pour soup in a cup, add honey when cool, serve.

Serving Method: Serve as drinks.

Beneficial Function: Clear away heat, promote diuresis,remove fat.

Tips: If you don't like to eat mung bean and Job's Tears you can put them in the flour to bake bread.

3. Smart Drinking Tips

Choosing a cup of drinks should not only according to your favorite, your constitution is the most important reference. Otherwise your health will be affected.

Who cannot drink iced water/juice?

So cool a cup of iced water/juice in such hot summer day! But wait, not everyone is suitable to drink iced water/juice.

If you are in menstrual period don't drink iced water or fruit. Cold drinks will cause dysmenorrhea. For us women, even if you are not in menstrual period, you shouldn't drink lots of iced water/juice. If the drinks or fruit is in fridge, don't drink or eat as soon as they are taken out. Eat or drink after they recover to the same temperature as that of room.

Not only for women, men should not drink too much iced water/juice either.

Cold drinks also stimulate stomach and intestine. Those who always have problems with stomach and intestine should not eat or drink too cold food.

Yang deficiency people cannot drink iced water. These group of people always feel cold. Drinking cold water will kill more Yang Qi and so feel colder.

Other notes on drink-choice.

Don't allow infant and adolescence to drink only drinks(bought in supermarket), replacing water, especially sugar-containing drinks.

Those shouldn't drink sugar-containing juice who are with coronary heart disease, hypertension, diabetes, hyperlipidemia,arteriosclerosis,etc.

Students should drink more apple juice as there is Zinc in apple which nourish brain and promote memory.

Those who are working in high-temperature environment and always feel hot should drink mung bean soup which has the function of clearing away heat.

Those who are easy to get cold should drink orange juice,strawberry juice and Chinese gooseberry as there are lots of vitamin C in these fruits which improve our immunity
