The Winter Solstice,Yin - Yang, and Nature Law

Dec.22 is the Winter Solstice. This is the moment when Yin and Yang are transforming. From this day Yin Qi gets to its extreme while Yang Qi begins to generate. We should protect Yang Qi the same way as we protect a new baby. Do some slow exercise or moderate-intensity activity; better no perspiration. If you always do vigorous-intensity physical activity in this period (especially those who live in places that there is no seasonal changes), you may excessively consume your Yang Qi, causing the following symptoms in the coming spring: limb weakness, dizziness, or internal heat, etc. So wish you a peaceful and joy Christmas Day!

People who live in Southern Hemisphere such as Australia are on the contrary situation. It's hot summer now. Yang Qi is getting to its extreme while Yin Qi begins to generate. You should do more exercises and go out to sweat more. Don't always stay in cold air-con room.

So it's the principle of Traditional Chinese Medicine - abide by the nature law. It's also the philosophy of Daoism.

Spring is the season of generation. Bean sprouts are full of generating energy. We should eat more in spring.

Summer is the season of growth. Green or colorful leave vegetables are good choice such as baby bok choy, lettuce, Arugula, Kale, celery, etc. Most of them have the function of clearing away heat.

Autumn is the season of convergence and harvest. There are lots of fruits in this season. They can moisten our lung to avoid dryness. Sour flavor fruit especially help to promote production of body fluid such as plum and hawthorn berry. Seasonal vegetables include radish, eggplant, and cauliflower, etc..

Winter is the season of store. Storing energy to welcome the coming spring. Stalk and root vegetables are good for us in this season such as sweet potato, pumpkin, taro, potato, yam. Most of them have warm energy, especially when being stewed for longer time.

Our kidney is active in winter. Most of meats nourish the kidney, so eating some meat in winter is good to our health, especially those who live in cold areas or senior people. The function of senior people's kidney is going down. Meat is the best supplement for the kidney. But it's effective only when we serve appropriately. You can be a vegetarian in other seasons, but in winter you'll eat some meat. 1 or 2 times a week, less than 100g each time. Healthy eating should be balanced, going extreme will harm our body.

How to supplement the kidney for a vegetarian or vegan in winter?

Besides stalk and root vegetables, these foods are good to the kidney: walnut, black sesame seeds, black rice, black soybean, Chinese date,etc. You can use these foods to do supplement paste and serve each day. Below link is the recipe:

Additional Tips About Beef Stew

From last issue I know that some friends loved beef dishes so much! Actually stewing beef is not as difficult as you imagined.

It is really very easy. You even can make it done within 30 minutes if you have pressure cooker (but I'll introduce normal pot cooking here). Actually it only needs the following three steps:

a. Marinate over night (by soy sauce and rice wine). (Omit this step if you are in a rush)

b. Boil and skim. Add radish blocks, 2 layers of onions, and hawthorn (replace with 1/2 bag tea if you don't have).

c. Simmer for 2 hours. (Don't bother it during this period). At last, don't forget add salt for taste.

Some friends wonder why Chinese restaurants make their beef so tender. If you do these three things: marinate overnight, add hawthorn, and simmer for 2 hours in low heat, then you can get very tender beef.

You can stew more using the above method one time and store in fridge for later use. Each time when you want to prepare stewed beef, take some and cook together with vegetables. It'll be done within 30 minutes.
