1. Zangxiang theory(viscera and their manifestation)(II)

In last issue, we mentioned that "Five Zang-organs are heart, liver, spleen, lung, and kidney. Their function is "to store Jing-Qi(essence)" which is refined food nutrient responsible for maintaining life activities."

We also said that "in Zangxiang theory, some organs have the same name with modern medicine, but the functions of the Zang-Fu organs are extensive. They are not just the conceptions of anatomy,but synthetic functional units."

The physiological function of the Five Zang-organs are closely related with the body, the organs and the orifices. Below is their relationship table.

For example, if the function of your liver gets problem your eyes tend to get problem. In the meantime your temper is very bad, easy to get anger.

Though iced tea is tasty after storing sometime in fridge, I really don't suggest you drink at once as soon as taking out from the fridge. Especially girls and ladies.

a. Ageratum Green Iced Tea

Ingredients

15g Ageratum

1 green tea bag

2 tablespoon sugar

Procedure:

1. Put Ageratum in a piece of gauze, add in a tea pot together with a green tea bag and sugar.

2. Add boiling water(about 80C).Brew for 5mins with cover.

3. Add ice,or put in fridge after cool.

Beneficial Function: Clear away summer heat,remove dampness,promote appetite,relieve vomit.

Note: Ageratum(Chinese:Huo Xiang) is Chinese herb used to remove dampness, clear away summer heat and relieve diarrhea in Summer. You can buy in Asian drug store.

b. Mongolian milk tea

My deep impression to Mongolian milk tea is that they add salt in the tea. At the beginning you may feel uncomfortable with its taste. But after drinking several times later, you'll feel tasty.

Ingredients:

1 cup milk

15g pressed cake of brick tea or puer tea or black tea

15g rice

1/2 teaspoon salt

Procedure:

1. Clean rice, dry well,stir fry in a wok till the color becomes deep yellow. Set aside

2. Add 4 cups of water in a skillet,add tea,cook till tea color becomes deep brown. Filter out tea leaves.

3. Leave tea soup in the skillet, add cooked rice(step 1),milk, bring to a boil. Add salt,cook additional 10mins. Turn off heat,coolCserve.

Note: Pressed cake of brick tea is featured tea in Mongolia. Puer tea belongs to one of them. Brick tea has the function of removing fat. Mongolian people eat lots of meat, so they eat brick tea to remove excessive fat.

c. Hawthorn Green Tea

2 bag green tea

1/4 cup hawthorn

1/4 cup crystal sugar

2 cups of water

Procedure:

1. Clean hawthorn,add water,cook till hawthorn becomes very soft and scattered(about 30mins).

2. Add tea bags and crystal sugar,boil for additional 5mins.

3. Turn off heat, filter dregs, cool and put soup in frig.

Serving Method: Serve after meals.

Beneficial function: Help with digestion, remove fat.

d. Blackberry Green Tea

Ingredients:

2 cup blackberry

2 green tea bags

1 cup water

1/2 cup honey

Procedure:

1. Add blackberry and water in a cooker, bring to a boil, continue to cook till blackberry becomes soft and split.

2. Use a long handled spoon to crush blackberry making sure more juice comes out.

3. Turn off heat, remove dregs.

4. Leave juice in the pot, turn on heat,bring to a boil. Add tea bags,brew for 10mins with cover.

5. Take out cover, stir evenly. Cool,add ice or put in fridge. Serve.

Beneficial Function: Promote body fluid,relieve constipation,suitable for those constipation caused by filled or by body fluid deficiency.

Note: If you really want to cure constipation don't add ice,nor put in fridge. Just Drink after cool. If you only drink blackberry it also cures your constipation. But you should at least stick to 2 weeks. And drink a cup each day.

3. Recipes for Father

It's turn to Father's Day again. Here I'll introduce three healthy recipes for dads. Hope your Dad like them. Middle to senior aged man should eat more fish and tofu than other meat. Small red bean helps to remove fat.

Water Boiled Fish Fillet

This is a very famous Sichuan style dish in China. Very,very delicious. It uses Sichuan pepper and Sichuan Chili Sauce. Here I did some changes-didn't use much oil,much Sichuan pepper or much chili sauce. And I also prepared two recipes: One for those "Big Chefs" who know how to fillet fish; Another for those who don't like or don't know how to fillet fish.

Recipe for those who can self-fillet fish


Ingredients:

1 fish(choose the type you like), about 1kg

500g soybean sprout

30g Sichuan chili pepper(or other dried red chili pepper.You can choose not to add if you don't like chili flavor)

20g Sichuan pepper(Chinese Prickly Ash Pepper)

2 tablespoon Sichuan soybean paste(if don't have, use normal Chinese soybean paste or Japanese soybean paste)

2 tablespoon olive oil

3000ml hot water

Seasoning A:

1 teaspoon salt

1 tablespoon pepper

1 tablespoon rice wine

2 tablespoon cornstarch

Seasoning B:

1 teaspoon salt

Seasoning C:

2 tablespoon ginger,chopped

4 piece garlic,chopped

1 piece cassia bark

1 tablespoon rice wine

1/2 teaspoon salt

1 anise star

Procedure:

1. Clean fish,fillet fish(don't fillet too thin). Don't throw away fish head,tail,and bone.

2. Mix seasoning A,coat fillet with A. Put in fridge for 30mins.

3. Clean soybean sprout,boiling in water for 10mins(put seasoning B in it). Take out,arrange on the bottom of a big bowl.

4. Heat oil in a wok,add Sichuan chili pepper,Sichuan pepper. Turn off heat,making use of the oil heat,continue to cook till the chili pepper turns deep color(actually chili pepper is crispy and very tasty at this moment.). Take out half of the Sichuan pepper and Sichuan chili pepper. Set aside.

5. Turn on heat again,add soybean paste,stir fry several times. Add seasoning C. Stir fry till fragrance comes out. Add fish head,tail and bone(from step 1). Stir fry additional 5mins.

6. Add 3000ml hot water,1 teaspoon salt. Bring to a boil. Continue to cook additional 10-15mins over low heat. Take out fish head,tail and bone.

7. In the meantime, heat water in another pot,bring to a boil.Slip in fillet. Slightly spread by using chopstick. Before boil again(and nearly boil) scoop up fillet carefully. Set aside.

8. When the fish soup(from step 6) is ready and bring a boil again,slip in fillet.Slightly spread. Bring to a boil again. Continue to cook additional 2mins.

9. Spread Sichuan pepper and Sichuan chili pepper(from step 4) on the surface. Turn off heat. Pour on the soybean sprout(from step 3).Serve.

Serving Method: Serve with steamed rice. Drink soup and eat fish meat.

Recipe for those who don't like to fillet fish.

Buy 500g fillet fish from the market. If there is also sales of fish head,tail or bone,then cook according to the above. If not, as no fish soup cooking in water is not delicious, so we have to make Stir Fried Fillet Fish.

Ingredients:

500g fillet fish

500g soybean sprout

10g Sichuan chili pepper(or other dried red chili pepper.You can choose not to add if you don't like chili flavor)

b. Tofu with Mushroom and Shrimp

Ingredients:

1 block tofu,soft

1 cup shrimp,shelled

1/2 cup black mushroom

1 red sweet pepper,small

1 green sweet pepper,small

2 tablespoon oil

1 tablespoon cornstarch

Seasoning:

1 teaspoon soy sauce

1 teaspoon rice wine

1 tablespoon ginger, chopped

1 tablespoon garlic, chopped

1 teaspoon salt

Procedure:

1. Boiling black mushroom for 10mins. Take out,drain well, cut into small cubes.

2. Cut tofu into small cubes. Cut shrimp into small section.

3. Clean sweet pepper, cut into small cubes.

4. Heat oil in a wok, seasoning,stir fry.

   Add mushroom,sweet pepper,stir fry.

5. Add 2 tablespoon hot water,add tofu, carefully spread out. Cover,simmer 2mins(to make tofu solid).

6. Mix cornstarch with water,add in the wok.Stir well,making sure tofu is coated with vegetable juice. Pour on a plate. Serve.

Note: If you only have solid tofu,throw tofu into the wok first.

c. Small Red Bean Cake

Ingredients:

1 cup small red bean

1 cup coconut milk

1 cup milk

1 tablespoon agar agar powder(or a few strips)

2 tablespoon crystal sugar

Procedure

1. Clean small red bean,add in a cooker,add 10cups of water,cook about 2 hours,or until small red bean split.

2. Add coconut milk,milk,crystal sugar,mix well,bring to a boil.

3. Add agar agar powder,stir till agar agar powder totally melted.

4. Put the above soup in a big bowl(or the cookie models). Cool,soup will become solid even in room temperature.

5. Cut into small pieces,arrange on a plate,serve.

Tip: If don't add agar agar powder, this sweet dessert can be served as form of soup,also delicious. I added coconut milk,so it has Southeast Asia flavor. I don't like to eat too much sweet food, so here 2 tablespoon crystal sugar maybe too few for you. You can add more.(But you know, too much sugar is not good to our health. However, crystal sugar helps to moisten lung and relieve cough.).

4. How to promote Yang Qi

Yang Qi just likes the kindling of our life. If life kindling blooms our life will bloom. If life kindling dies our life will be over. So we should absorb Yang Qi,especially those who are Yang deficiency or Qi deficiency(Please reference here:http://www.healthy-chinese-recipe.com/coronary-artery-disease-diet.html Yang deficiency or Qi deficiency).

Here are some methods to absorb Yang Qi

a. At sunrise,do deep breath facing east direction. Yang Qi will go into our body through nose,skin.

b. At noon when the Sun is on the top of our head, the essence of the Sun will go to our body through BaiHui Point(a massage point which is on the top of our head).

Note: Be careful on high temperature days in summer! Don't do this in very hot day.

c. At top point of mountain or hill,facing south can make Yang Qi to go to in our body.

d. At sunset when red cloud comes out, go outdoor. Try to make use of the last chance of the day that Sun gives us to absorb Yang Qi
