Please accept my late greetings for Thanksgiving Day. Thank you for your support and your time spending on my website and my newsletter.

Also thanks God for giving us health, and thanks ourselves for keeping healthy eating without always being indulgent in junk food. I'm using "always" because we may indulge ourselves one time on special occasion like yesterday; Or give ourselves a prize on special day such as birthday to eat more pieces of chocolate cake.

1. Jing, Qi, blood and body fluid(II)- Qi

In Western medicine, the nutriments that we need are sugar, fat, protein, water, trace element, vitamin, in which sugar, protein and fat are substances that provide us with energy.

In Traditional Chinese Medicine, the substances that maintain our life activities are Jing, Qi, blood, body fluid.

In Tradition Chinese culture, all life phenomenon is explained to be the result of Qi activities. Chinese medicine holds that Qi is very tiny fine invisible substances which are active and in constant motion. Qi constitutes and maintains the whole procedure of life activities.

The generation of Qi is closely related to the kidney,spleen and stomach, and lung. Kidney stores congenital Qi from parents. Spleen and stomach absorb Qi transformed by food nutrients. Lung inhales Qi(air) from the nature.

The existence of Qi is through the following physiological activities:

a. Propelling Function: Qi can stimulate and maintain the physiological functions of the viscera and other organs, and promote blood circulation.

Weakness of Qi in propelling will lead to hypo-function of the viscera and other organs and cause various deficiency problems.

b. Warming Function: Qi can keep our body in normal temperature, balancing our body and external environment.

If the warming function of Qi is weakened, it will lead to stagnation of internal cold, unsmooth circulation of Qi and blood and devitalization of the visceral functions.

c. Protecting Function: Qi protect the surface of our skin, preventing from the invasion of pathogenic factors.

If the protecting function of Qi is weakened, it mainly leads to decline of body resistance and susceptibility of the body to invasion of pathogenic factors.

d. Fixating Function: Preventing liquid substances such as blood, body fluid, sperm and urine from discharging or losing.

If the fixating function of Qi is weakened, it will lead to loss of blood, body fluid, sperm, or even lead to protracted diarrhea, incontinence of urine and stool as well as proctoptosis and hysteroptosis.

e. Qi-Transforming Function: Qi can maintain the regular function and activities of the visceras, and keep the smooth going of metabolism of blood, body fluid and sperm,etc.

If Qi-transformation is weakened, the whole process of life will be in disorder or decline, leading to various diseases,and even death.

2.Self-Made QI-Blood Supplement Paste

In deep autumn and early winter, it is the best time to eat some tonic. at this period of time everything is stored and no dispersion of Yang Qi, nutrient is easy to be absorbed and stored by our body. In Chinese medicine, talking about supplement, it is actually to supplement Jing(essence),Qi, blood and nourish spleen and stomach. So we can eat some foods such as Chinese date(supplement blood and Qi), black sesame seed(supplement kidney),walnut,or pecan(supplement kidney),Goji berry,longan,brown sugar,etc.

Regular used recipes are Chinese date with Logan Tea, Chicken with Goji Berry Soup, Small Red bean with Chinese Date Porridge,etc. If you cook these foods as nourishment, you'd better cook longer time until completely and thoroughly cooked. Only do so, can these foods be digested and absorbed well.

There is a Chinese herb called E Jiao. It is Donkey Hide Glue, a very popular blood tonic. You can buy from Asian drug shop. Below is the recipe I'll introduce to you today, by using E Jiao. It's easy made,safe and efficient tonic. However, you still need to follow the eating guide before serve.

E Jiao Supplement Paste

Ingredients:

125g E Jiao

250g black sesame seeds

250g walnut flesh

250g Chinese date

125g crystal sugar

600ml rice wine

Procedure:

1. Crush E Jiao, marinate in half(300ml) rice wine for 7-10days or until totally melted.

2. Stir fry black sesame seeds in a saucepan until cooked(constant stir and don't cook too long time otherwise it'll burned). Grind into powder.

3. Stir fry walnut kernel in the saucepan until cooked. Grind into powder.

4. Clean Chinese date,remove kernel,grind or chopped.

5. Grind crystal sugar.

6. Prepare a big basin with cover, add all the above five material in the basin,add the rest 300ml rice wine. Stir evenly. Cover,place on the drawer of a steamer, cover.

7. Steam over high heat for 15mins, turn to low heat,continue to steam for additional one and half hours.

8. Cool,don't allow water to drop in. Distribute into several small bottles. Leave one bottle for daily serve, and put the rest in the frig.

Beneficial Function: E Jiao and Chinese date supplement blood; Black sesame seeds and walnut flesh supplement kidney; Crystal sugar moistens dryness. Rice wine promotes blood circulation and increases the efficiency of the above foods. All the materials are ground,so the tonic is easy to be digested and absorbed. HematinFf will increase after continuing to serve 1-2 months.

This tonic is suitable for women long term used; For senior people to supplement blood, kidney; For kids to cure asthma; For men who are weak,or with gout,etc. 

Serving Guide:

1. The quantity of serve is different for special individual.

Those who are weak after illness: 2 times each day. 1 teaspoon each time.

Those who are with women's health problem: 2 times each day. 1 teaspoon each time.

Men who want to reduce blood pressure,lipid,or cure gout: 1 or 2 times each day. 1 teaspoon each time.

Those who just for health care: 1 teaspoon in the morning each day.

For kids: less half of a teaspoon before going to sleep.

If you have symptom of "fire" (feel hot,or pimple comes out) after eating this tonic, you can reduce the quantity to one teaspoon for two days.

If you have loose stool after eating this tonic, that means you have heavy cold and dampness in the stomach and spleen. You can solve this by eating some ginger and other spicy foods.

I ate half a teaspoon per day at the beginning, then increased to 1 teaspoon each day now.

2. Add and Reduce:

If you are diabetic,replace crystal sugar with 25-50g Goji berry.

If you have serious constipation, add 50-75g pine nut.

If you have serious Qi deficiency,feeling cold, add 50-75g longan.

If you have serious insomnia, add 25-50g sour jujube kernel.(It's Chinese herb which can buy from Asian drug store).

3.Corn Recipes-Remove the Grease in Holiday

Corn is called oil-scraping food. It helps to remove grease in our body and so very suitable to eat on holidays. For more about corn, please visit:

a.Steamed Cornmeal Bread/Cornmeal Cake

Ingredients:

2 cups whole wheat powder

1 cup cornmeal

1 egg

1 teaspoon sugar

1 teaspoon yeast

1/2 cup of milk

 
Procedure:

1. Mix cornmeal, whole wheat, egg,sugar,yeast, slowly add milk while stir(by chopstick) at the same direction until it almost becomes paste. Knead by hands into a piece of paste. Cover, let it stay for 40mins in warm place or until it totally ferments.

2. Place several pieces of vegetable leaves on the drawer of a steamer. Pour on the above paste. Place some Chinese date on the surface if you like. Cover. Steam for 20mins over high heat.

3. Turn off heat, cut into small pieces,serve.

Serving Methods: Serve as main food or desert.

Tips:

1. If you like to bake, you can put in some mold after the step 1. Then bake in the oven.

2. If the paste from the step 1 is hard enough, you can divide into small pieces and then steam.

3. Don't fill in the bottom of the drawer full,must leave some hole to let the vapor come out.

4. If you like sweet food, you can remove Chinese date kernel,then cut into small pieces,and then add in the flour with all the material. Chinese date is much healthier than sugar.

b. Corn Grain with Tofu Soup

Ingredients:

1/2 cup tender corn grains

1/4 block tofu

1 tablespoon mushroom, chopped

1 tablespoon carrot,chopped

1 teaspoon soy sauce

1/2 teaspoon salt

1 teaspoon garlic,chopped

1 tablespoon shallot,chopped

1 teaspoon dry cornstarch

1 tablespoon olive oil

1/2 teaspoon pepper

Procedure:

1. Cut tofu into small cubes,1.5 times size as that of corn grain.

2. Heat oil in the wok, add ginger, shallot,let fragrance come out. Add mushroom, carrot, corn grains,soy sauce,stir fry 2mins.

3. Add 2 cups of hot water,cover,boil over low heat until corn grains cooked. Mix cornstarch with a little cold water, stir well, slowly pour in the wok while stir the soup quickly. Bring to a boil.

4. Add salt,tofu,cover,boil 3-5mins. Add pepper, turn off heat,serve.

Serving Methods: Serve as soup at breakfast, lunch, or dinner. A cup each time.

c. Stir Fried Corn with Pine Nut

Ingredients:

1 cup tender sweet corn grains

1/2 cup pine nut

1 tablespoon carrot,chopped

1 tablespoon olive oil

1/2 teaspoon salt

1 teaspoon shallot, chopped

1 teaspoon ginger, chopped

Procedure:

1. Heat oil in a wok, add shallot, ginger,let fragrance comes out.

2. Add carrot, stir well.

   Add corn grains, pine nuts, stir well.

   Add 1 tablespoon hot water,salt, stir 2mins. 

3. Turn off heat, pour on a dish, serve.

Serving Method: Serve as side dish at lunch or dinner.

This recipe is famous in Northeast of China as there produced pine nut. Sweet corn flavor mixed with pine nut flavor is so attractive that you cannot stop yourself from eating it in case you start to eat.

4. Holiday Special: Recipes for Thanksgiving Day's Leftover

Making use of the leftover from Thanksgiving Day, you can cook very delicious food!

a. Fried Rice with Turkey Recipe

Ingredients:

2 cup steamed white rice

1/2 cup turkey leftover from Thanksgiving Day, chopped

1/2 cup tomato, chopped

1/2 cup onion, chopped

1 teaspoon garlic, chopped

1 tablespoon tomato sauce

1 egg

1 teaspoon soy sauce

1/2 teaspoon salt

2 teaspoon olive oil

Procedure

1. Crack egg in a small bowl,stir well,set aside.

2. Heat oil in a wok, add onion, garlic, stir, let fragrance comes out

   Add turkey, soy sauce, stir fry;

   Add tomato sauce, stir fry;

   Add rice, stir fry,add egg,stir fry;

   Add salt, chopped tomato,stir fry for 5mins.

3. Turn off heat. Serve.  

Serving Methods: Serve as main food at lunch or dinner.

b. Stir Fried Turkey with Mixed Beans

Ingredients:

1 cup turkey leftover from Thanksgiving Day,chopped

1 1/2 cup beans(soybean,kidney bean,navy bean) leftover from Thanksgiving Day

1 tablespoon onion, chopped

1 teaspoon garlic, chopped

2 green pepper

1 teaspoon soy sauce

1/1 teaspoon salt

1 tablespoon olive oil

Procedure

1. Clean green pepper,cut into small pieces, 1.5times size of beans.

2. Heat oil in a wok,add onions,garlic, let smell comes out.

   Add turkey,beans,soy sauce,green pepper,stir fry 1min.

   Add 1 teaspoon hot water, salt, stir fry 2mins.

3. Turn off heat,pour in a dish ,serve.

Serving Method: Serve as side dish at lunch or dinner.
